Crazy Delicious Vegan Buffalo Wings

- 1 head cauliflower (cut into florets)
- 1 cup rice flour
- 1 cup water (more if necessary)
- 1 tablespoon garlic powder
- ½ teaspoon cayenne
- ½ teaspoon turmeric
- 2 teaspoons salt
- ½ teaspoon ground black pepper
- 2 cups panko breadcrumbs (needs to be this coarse heavy type)
- ⅔ cup hot sauce of choice (or more to taste)
- ½ cup honey (to taste)
- celery sticks (optional)
- Preheat oven to 425 – line cookie sheet with parchment paper
- In a large bowl, whisk rice flour, garlic powder, cayenne, salt, turmeric, pepper. Add water and whisk until smooth and creamy.
- Cut cauliflower into bite size chunks. We bought bags of ready made fresh cauliflower.
- Drop cauliflower pieces into batter and coat. Using a fork, remove from batter and coat with panko. Place on cookie sheet.
- Bake for 20 minutes.
- In a separate bowl, mix Frank’s hot sauce and honey. Divide into 2 equal parts.
- When cauliflower is done cooking, coat with half of hot sauce mix and return to oven for another 10 minutes.
- When done, drizzle remaining sauce over pieces and serve with celery slices or over a bed of rice.
