Sticky Vegan Low Fat Popcorn

- 8 to 10 cups popped corn
- ¼ cup honey (or agave nectar)
- ¼ cup Xylitol or Brown Sugar
- Scant ¼ tsp Salt
- ¼ tsp baking soda
- OPTIONAL: Handful of nuts (I love raw sunflower seeds)
- Pop your popcorn. Air popped is lowest fat. If doing it on the stove use canola or coconut oil.
- Place honey (or agave) and Xylitol (or brown sugar) in small pan on stove. Cook on LOW heat stirring till sugar dissolves.
- Take off burner and add in the baking soda. It makes the melted sweetener all puffy and creamy.
- Slowly pour the hot mixture over the popcorn while stirring popcorn to coat evenly.
- Toss in nuts if desired.
